Lentil, Brown Rice and Carrot Puree
Lentils are a healthy baby food as they contain iron, protein, fiber, minerals and B vitamins. To prepare lentils for your baby food recipes, simply follow the cooking instructions on the package or purchase them already cooked in a can.
Lentils come in different colors, red, yellow and brown. Any of the three would be a good choice for your recipe.
Chickpeas, navy beans, split peas, and any other kinds of beans or legumes can be substituted here. Canned lentils or beans are fine to use for making baby food, as long as they are unspiced and unsalted.
- ½ C Red Lentils
- 2 Tbsp Brown Rice
- 1 Tbsp Oil
- 2 Tbsp Carrot, chopped
- 2 C Water
Soak the lentils overnight according to package directions. Drain. Cook the rice according to the directions on the package.
Saute the carrot in oil until soft. Add the drained lentils, and 2 cups of water. Bring to a boil, then simmer about 45 - 50 minutes, or until lentils are soft.
Drain mixture and place into a food processor or blender, along with the brown rice, reserving the cooking liquid. Purée until smooth, adding cooking liquid 1 tablespoon at a time until the mixture is smooth and the consistency you prefer for your baby.
You can substitute any beans for the lentils, sweet potatoes, pumpkin, butternut squash or any other fruit/vegetable for the carrots.......and add cooked brown rice to the mixture as well. It's really up to you and what your baby likes.
You can make this and any other pureed baby foods in larger quanties and freeze in ice cube trays for convenience.
