RAW AVOCADO NORI WRAPS
  • 6 - 8 Sheets of Raw Nori
  • 4 Very Ripe Avocados
  • 3 Large Tomatoes, diced
  • 1 C. Raw Corn Kernels
  • 1 Red Pepper, diced
  • 1 Yellow Onion, finely chopped
  • 3 Cloves Garlic, finely minced
  • 1 Tbsp. Fresh Lime Juice
  • 1/4 C. Fresh Cilantro, chopped
  • 1/4 C. Raw Sunflower Seeds
Mash the avocados. Add the remaining ingredients, mixing each one in thoroughly.

Place a sheet of nori on a plate and add a generous amount of the avocado mixture to the center. Roll as you would a buritto. Bring the bottom corner up and then begin rolling from left to right tucking in the ends, until you end up with a little bundle. You can either leave the top open or tuck it in.

RAW NUT PESTO
  • 2 C. Raw Nuts of your choice (Cashews, Almonds, Pistachios, Hazelnuts, Pine Nuts, Walnuts, Pecans)
  • 3 Garlic Cloves
  • 2/3 C. Extra Virgin Olive Oil
  • 2-3 t. Red Pepper Flakes
  • Black Pepper to taste
  • 2 C. Fresh Basil Leaves (packed)
Process nuts and other ingredients in food processor until you have a coarse consistency, similar to a nut butter. (If you are looking for a good food processor, they are available on my products page at RAW GURU.)

VEGAN LETTUCE WRAPS
  • 1 C. Carrots, grated
  • 1 C. Zucchini, cut in thin strips
  • 1 C. Red Cabbage, finely chopped
  • 1/2 C. Bean Sprouts
  • 1/2 C. Plum Tomatoes, chopped
  • 1/2 C. Red Onion, finely chopped
  • 1/2 C. Celery, finely chopped
  • 1 Large Red Pepper, thinly sliced
  • Lettuce Leaves - Romaine, Iceberg, Radiccio, Bibb, Butter head (whatever you'd prefer)
  • Raw Nut Pesto
Lay out lettuce leaves of your choice. Spread a generous amount of the nut pesto (see RAW NUT PESTO) on each, and then begin adding each of the vegetables down the center (you can use whatever vegetables you'd prefer). Roll up as you would a buritto or crepe.

RAW VEGGIE NUT LOAF
  • 2 large Sweet Potatoes
  • 2 large Russet Potatoes
  • 1 large Turnip
  • 1 large Red Beet
  • 3 Carrots
  • 2 Portabella Mushrooms
  • 1 Red Onion
  • 3 or 4 Stalks of Celery
  • 1/2 C. Flax seeds
  • 1 Lb. Raw Nuts of your choice
  • 3 Tbsp. fresh Garlic
  • 1/4 Cup fresh Parsley
  • 3 Tbsp. fresh Sage
  • 3 Tbsp. fresh Rosemary
  • 3 Tbsp. fresh Thyme
Shred vegetables in food processor and add to bowl. Combine flax seeds, nuts, garlic and herbs and grind to a paste. Combine with vegetables and form into loaf pan. Refrigerate overnight for flavors to marry. Slice.

APPLE RAISIN COOKIES
  • 7 large Fuji Apples, peeled and cored
  • 1 Cup Agave Nectar
  • 1 1/2 C Raisins
  • 1/2 Cup Dates, chopped
  • 4Tbsp Cinnamon
  • 2 Cups soaked Almonds, ground in food processor
Shred apples in a food processor. Mix all ingredients together. Press the mixture into flat, round cookies and place them on dehydrator sheets. Dehydrate at 105°F for about 24 hours. Cookies should be chewy, not dry. (You can purchase a dehydrator on my products page at RAW GURU. It's a great investment if you are interested in a raw foods diet.)
